If you know the difference between
TOCINO IBéRICO
and
American smoked bacon,
please tell me whether American bacon can/should be used in Judias con Chorizo?

American bacon and tocino iberico are from the same place but differently made. Tocino iberico is more salty and quite more fatty. Bacon is smoked and I think that tocino is not
If you have a chunk of pancetta I guess you could use it but it would not be 100% the same.
